Alright. I just thought having this club would be so fun.

COoking is an art. (haha yes it is. I'm not so good at it though). So as I want to make time to prepare and decorate my food, I also want to discover new dishes that are easy to make, fast and delicious. So yeah, The result of that is we are having a cooking club ;)
Rules are simple.
- You have to put your recipes (so other members can make them)
- Post pictures of that recipe dish (recommend you make it, not by getting a picture off internet).
- If you don't put recipe, you still can post pics of the dish you make that the recipe is already posted here.
Simple, isn't it? Besides, It's gotta be really really fun. Enjoy cooking, your meals and take pictures :hohoho: (hm, I wonder how many people would join this club? or maybe just me? =.=')

Clementine Sugar Cookies

1 1/4 cups sugar, divided 1/2 cup and 3/4 cup
Zest of 2 clementines, divided
1/2 cup (1 stick) unsalted butter, softened to room temperature
1 large egg, beaten
1/2 teaspoon vanilla
Juice of 2 clementines (a bit less than 1/4 cup)
1 3/4 cups all purpose flour
pinch of sea salt
1 teaspoon cream of tartar
1/2 teaspoon baking soda

Blend the 1/2 cup of sugar with zest of one clementine and 1/4 teaspoon clementine juice. Prepare in a medium size bowl the flour,salt,cream of tartar and the baking soda once in the bowl mix it all up and put it to the side.In a large mixing bowl, cream together butter and remaining 3/4 cup sugar. Blend in beaten egg, vanilla, clementine juice, and remaining clementine zest. Add flour mixture, 1/2 cup at a time until all flour is not seen.Put the dough in the refrigerator for 1 hour.Pre-heat the oven to 350 degrees.Shape about one tablespoonful of dough into a ball and roll in clementine sugar. Place on lightly greased non-stick cookie sheet and press down lightly on the ball of dough with the bottom of the glass until cookie is about 1/3 to 1/2 inch thick now repeat that step.Bake the cookies to your pleasure in about 13-15 minutes.The pic above all this shows how they should really show out. Sorry if this was hard to understand.

i ued to make shortbread alot and tend to have to cook roast dinners, chilli con carne lasagne and spagetti bolonase but i dont have a pictures of them at the min hmm have to remember to take a picture of them next time but they are all simple so i doubt you need to know how to cook them cos you probably already know

@Peku: welcome and do post your recipes. Each country and culture has different recipes that other might not know. So maybe lots of us haven't even heard about :D so just post it =^^=

alrighty :) Another dish for us food lovers :ecchismile:

It's TAMAGOYAKI - aka egg roll - Btw, Tamago is EGG in Japanese ;)

First of all, i would like to introduce 2 type of egg rolls. Eggs roll without any extra ingredients is called TAMAGOYAKi. The other one, you can put inside those layers of egg anything else (such as onions, meat, etc...) is called Dashi Maki Tamago. They make pretty much the same tho, just that when you make Dashi Maki Tamaga, you put extra stuffs between layers while you roll them. So yah.

You are recommended to use Tamago Pan (which, actually, a rectangular pan) to cook. But any pan is fine (though they won't come out even as a perfect rectangular roll, but it's not a big matter :D)
There are few other recipes too, but this is quite the most easy ingredients I think, and it's quite the basic ^^

OK, here we go:

Things You’ll Need: 2 servings
* 3-4 eggs
* 1 1/2 tbsp sugar
* 1/2 tsp salt
* 1 tsp soy sauce/fish sauce (if you don't have salt, you can add 1 1/2 Soy sauce instead)
* (salad) oil (greasing pan) (or any kind of oil, not much a big deal. Just different calories :D)
* 5 tbsp dashi stock (you don't really need this, but it'll add up flavor)

Step1: In a bowl, beat the egg lightly (do not overmix).
Step2: Add the ingredients (sugar, salt, soy sauce (and dashi, if you have)). Mix well to incorporate the stock and seasoning.
Step3: Heat a (rectangular) pan with a cheesecloth dipped in salad oil. Pour in just enough of the egg mixture to thinly cover the surface. (which actually, it's 1/4 -> 1/5 of your eggs).
Step4: Cook till the top of the egg is almost dry.
Using a spatula or chopsticks, roll the egg towards you from the far end of the pan.
Push rolled omelet back to the far end of the pan.
Step5: Pour in more egg mixture and lift up the rolled section as you go, to have the egg mixture cover the entire surface of the pan.
cook till the top of the egg section is almost dried and then roll the section towards with the newly cooked egg.
Step6: Repeat the same process till you've cooked all the egg mixture.
Cut omelete into slices and serve.

For Dashi Maki Tamago, while rolling, remember to put your extra ingredients there, such as beef, veggies, etc...

well i think i should join nows. I only make mexican food though so hope you like my stuff. I should make some tacos de picadillo on wednesday.

sigh i forgot my cell phone at home and i made split pea soup in class.
it had croutons in the middle(that i made by cutting up some bread pouring olive oil and adding salt and pepper, putting in a 350 degree oven till crisp and golden brown)

it turned up a bit more dark green cause i put too much carrots

the others in class made onion soup, and cream of broccoli.
the onion soup tasted sweet cause of the brandy. One group put way too much cloves in the onion soup made my tongue numb. another group put way too much pepper in the cream of broccoli that i couldnt taste for awhile. Oh right the other group that made split pea soup but in diced ham hock( i opted to leave it out) i kind of almost threw up.

well, everyone knows how to make pancakes, but since it's gonna be a complete cookbook, someone has to write about them, so why not me? :)

indeed they do mostly beginners, i dont think those girl have ever picked up a pot or pan.
k well i just made the tacos de picadillo i'll try to come up with the receipts but i dont have exact measures, and not unless you live in a big city or in a city with mexican poopulation it is hard to get the chiles en vinagre, and tortillas, use one pound of ground meat
i'll upload the pics of it laters as well as a better receipt dealie

1 pound of ground meat
1-2 medium potatoes(diced)
1 tomato (diced)
1-2 chiles jalapenos en vinagre
some of the vinagre juice(to taste)
1-2 chiles jalapenos
1 yellow or white onion(diced)
1-2 bay leafs
pinch of ground clove
pinch of ground cumin
two handfuls of rice

Put all ingredients in a long saucepan, add about 3 1/2 cups of water, cover it and let it cook for 20-30 minutes. Once all the ingredients are soft enough to mash use a masher to mash all the ingredients till it is all nice and mushed together. Cook till it dries out, let it stand for an hour till it cools.
Time to use some tortillas(i use the white corn ones) put it in the microwave for i minute. scoop up some with a spoon put on one tortilla cook it in vegetable oil till nice an crispy, and continue till you out.
serve on long plate with some sour cream.

Yogurt Chocolate Chip Cooooooooooookies ^^
Ingredients:


1/2 cup packed brown sugar
1/2 cup white sugar
1/2 cup margarine or butter
1/2 cup plain nonfat yogurt
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
2 cups semisweet chocolate chips

Steps:


Preheat oven at 375 degrees and a cookie tray with wax paper

Mix butter, brown and white sugar in a bowl until its creamy looking; then add vanilla extract and yogurt (mix well)
Sift flour and baking soda into the mixture and mix it all up
Add chocolate chips and mix some more xD
Drop by rounded teaspon about 2 inches apart and bake for about 10 minutes or until the edges of the cookies start to brown. Let it cool for a minute before putting it on a wire rack.

and.... thats about it!
you can add anything to it: nuts, M&Ms, oatmeal, vodka xD... you get the picture ^^

I was supposed to write a recipe for pancakes :D
Here it is
Pancakes
2 eggs, 1 glass of flour, 1 glass of milk+water (get the proportions like you like, I'm adding 3/4 of milk and 1/4 of water), vanilla sugar (~4g)
Mix everything (preferably with mixer, if you don't have one, use the spoon), heat the pan, spread the batter evenly on the pan, cook on both sides XD
Stuffing
Mix cottage cheese (the white one, like on the pictures page earlier) with milk/cream and sugar. Add fruits (I like it the most with strawberries, but berries and cherries aren't bad either ;))

i dont have a pic for this one...but its a lemonade:

What you need:
A large punch bowl
1-2 gallons of Simply Lemonade(or any lemonade you can make your own if you want)
1 quart of any sherpert ice cream

Get out the punch bowl,lemonade and sherbert. First let the sherbert thaw a little before doing anything else. The put all the lemonade you have out for this into the punch bowl.After put the sherbert ice cream into the bowl. Let it melt for a while just leaving a few chunks of sherbert ice cream. Mix it all up and there should be some kind of foam at the top its just the sherbert so its okay to drink. Then you can enjoy a nice refreshment.

yea not that hard my 7 year old cousin can make it...(i hope)

sounds disgusting but is surprisingly nice also one which i found out whilst on a holiday in america maple syrup on chipollatta sausages it sound so wrong but tastes so nice xD

Time to post a recipe.

Mexican Flan

1 can of evaporated milk
1 can of sweetened condense milk
5 eggs
1 tsp of vanilla

Caramel
1/2 cup of sugar

put the sugar in the pan and heat it to medium, you have to keep an eye on the sugar, but to uses spoons or any other think when heating the sugar if you do instead of caramel u can end up with crystallize sugar, when you can see the sugar melting just move the pan to make the rest of the sugar melt evenly. Once the sugar reaches a nice golden brown color take the pan form the stove and immediately put the caramel into a baking glass dish (2 quarter dish) spread the caramel evenly on the bottom of the dish just by turning around the dish (remember you can use anything to spread the caramel).

Now time to make the flan while the caramel cools off. preheat the oven to 425 F or 220 C

In a bleender mix the 2 cans of milk, the eggs and the vanilla once the caramel is cool pour the milky mix in to the baking dish cover the dish with aluminum foil and place the dish in a water bath an place it inside the oven for about 45 min. You know when the flan is done when you insert a toothpick and this comes out clean. When is ready take it out of t he oven and let it cool. Refrigerate leftover

i got some pictures of a roast dinner i cooked yesterday i will put it up along with recipe later to lazy to do it now would take 10 mins and i havnt slept in like 28 hours

ok here it is for those who dont know it already sunday dinner my instructions will be kinda vaugue at some points as i kinda wing it a bit when it comes to how long the veg get cooked and how long the roasties are in the oven and portion sizes modify as you see fit.

Feeds 4-5 people

You will need :P

medium to large potatoes your aiming for 2 maybe 3 whole potatoes per person depending on how much you eat
10-15 big carrots
1 medium sized swede
half a savoy cabage
a medium to large head of broccoli
gravy granules (very important :P)
a small boneless joint of beef (we had a 2 kilo joint and had a ridiculous amount left over though the dog was happy XD)

Tinfoil
peeler
oil typically sunflower or vegetable but have whatever you want i doubt it makes a hell of a lot of differance
butter no more than 100 grams i reckon: its added to the carrot and swede so add to desired taste it is not neccersary just makes it taste nicer.

other popular things to have with sunday roast dinner
roast parsnips which are very very nice you want thick parsnips other wise the thin end will burn to a crisp
the meat choice for this meal is flexible chicken turkey pork and lamb work well
Runner beans and sweetcorn can be eaten instead of broccoli but borccoli is more tradtional
yorkshire puddings are a must for i dont know how to make them so you will have to look them up or buy them ready made (we dont have them cos we are pretty health concious but they are really really nice)
stuffing is also an option but it tends to be more of a christmas addition

if you wish to add these and i havnt put clear instructions for cooking them then just let me know

Extras

ketchup
salt
for Beef horseraddish (if you want it spicey)
for Beef red currant jelly (if you want it sweet)
for chicken or turkey use cranberry sauce (again if you want it sweet)

equipment (god its turning into a science experiment XD)
you will need
masher
large saucepan for carrot and swede
medium-small saucepans for the brocolli and the cabbage
large saucepan for the potatoes
collinder
a lipped oven tray for the potatoes
a small lipped dish to hold the beef the closer the size of the beef is to the container the better

Method
preheat your oven to whatever temperature your paticular meat need genearly 200 degrees. Cut open the packaging of the meat and wash under a tap to get the excess blood off. Place the meat into the dish and cover with tinfoil and when oven is up to temperature put it in. the wrapping should give instructions to your indivual meat mine was 2kg and the instructions were 20 mins per 500g then 20 mins on top for medium meat so it gave me 1 hour 40 mins you wil need about an hour to an hour and a half for veg i reckon so if the meat will cook faster than that then start the veg first.

Once meat is cooking peel the potatoes and then chop them in large bitesize peices then place into the saucepan fill them with water so it covers the potatoesand leave on the cooker. next is the carrot and swede peel the carrots and cut off the ends then cut along the width to get peices no larger than a cm the smaller you cut the carrot the less time it will take for it to cook put the carrot into the large saucepan and do the swede which is prepared the same way as the carrots peel the skin cut off the ends then dice into cubes these can be a little larger as swede is softer then carrots put the swede in with the carrots and fill with ater to just above the carrot and swede.

Next cut up the the cabbage these want to fairly large something like cutting one way in 1 inch strips and cutting the other way in 1-2 inch strips place in the medium sauce pan then brocolli cut them on the head if they are 2 large then cut them to more appropriate size and place in the last saucepan again water just covering the veg .

20-30 minutes should have passed whilst preparing the veg but have a 10-20 minute break and clean up a bit or something (it will take around 40 mins for potatoes to cook) then start to boil the potatoes when it is boiling leave it for 10 mins then come back start boiling the carrot and swede and strain off the potatoes, they should have a kind of hard middle but the edges starting to soften structure now. fill the lipped oven tray with a cm thick layer of oil and place the potatoes in they dont need alot of space between but they cant be touching well actually it probably doesnt matter to much but try to avoid it once all of the potatoes are in get a spoon and use the oil in the oven tray to coat the potatoes with oil put them in the oven above the meat (if its beef or pork you should take off the tin foil now as it should have around 30-40 mins left to cook)

come back to the potatoes ever 10 mins and recoat with oil from the tray. 15 mins from the meat finishin start boiling the cabbage and brocolli then 5 mins from the meat finishing drain the water from the carrot and swede and begin mashing it up adding salt and butter to taste. next take out the potatoes from the oven and transfer them to a bowl or paper towls to give them a chance to drain off the excess oil and take the meat out. the remaining veg should be cooked now so drain them off but keep the water in the jug you will use to make the gravy as then you can get the nutritional value lost from boiling into the gravy :P not much to do now except serve up. if the water goes luke warm before you make the gravy then put it into a saucepan and boil it otherwise it wont thicken up if you are able to seperate the juices from the meat from the fat then add it to the gravy if you dont care about if it has fat in it then add it all.

when i cook it i tend to do things to try and make it healthier such as using fry light on the potatoes though the effect is that they dont have any crunchyness which is annoying i dont add butter to the carrot and sweede either cos its not to bad with just salt.

if your gonna do parsnips then peel them cut the ends and then cut into quarters lengthways remember if ends are to thin they burn to a crisp then about 20 mins from end put them with the roast potatoes in the oil in the end it should hopefully look something like this

there are loads of other ways of cooking it this is fairly basic im sure other people know plenty of ways to cook it nicer


obvious things are stuff like if it looks like its cooking to fast put tin foil over it or turn it down or take it out for a bit then put it in, boiling dry the veg is bad not got enough room on tray for potatoes then prepare another tray

geez this took much longer than i thought it would to write up hmm this forum really needs a bump thread button cos god know how long it will be before someone looks at this thread and double posting is just annoying

my family is going on holiday in a 5 weeks and i will be home alone for 2 weeks ^^ peace and tranquility (they were confused on why i didnt want to go) therefore im gonna be cooking all my meals for once instead of every now and again. i would like to try cooking some basic food from round the world nothing fancy just everyday foods. so im just asking for some suggestions which i can look up the recipe for. i wanna have a go at some japanese foods as well so i will prob end up making onigiri and that egg roll one but that would be a pretty boring meal plan for 2 weeks :p so any suggestions be it japanese mexican italian etc i dont really care where its from just post em up and i will look into them

Bread dough
Butter
Garlic
Mozzarella
Mild Cheddar

You can add more seasonings but I used what I had :)

Note as always cooking times will vary by your oven so keep an eye on it :D

Start with the dough and let it rise. I put mine an a non stick pan but greased it anyway :D

I mixed my cheeses up in a bowl:

Then after the bread is done (about 20 minutes for me) take it out and let it cool for a couple of minutes and when you take it out turn the oven down to 275:

While its cooling put the butter/garlic mix in the microwave to melt it and then cut the bread loaf in half:

After your butter garlic mix is melted:

Spread it on the bread:

being that its fall i thought this was a good thing to make (i made some last night really)

1/2 cup sugar
1/2 cup whole cream or 1/2 and 1/2
2 tblsp. butter
1/2 cup corn syrup
optional:
nuts
1/2 teaspoon of extract (in my case vanilla)

things needed:
heavy bottom pot
candy thermometer
cooking spray
small pan

this makes about 6-7oz

first you need to spray the pot with cooking spray to make sure the sugar doesn't get stuck to the side as it bubbles. a heavy bottom pot is needed because if its too thin it will burn at the bottom. when you add things to the pot i suggest you add the butter first then corn syrup then cream then the sugar. the reason for this is if you add the sugar first it has a chance of just sticking to the bottom and burning there. set your burner to med-low heat. string a little bit at the start to combine things a bit but after that do not stir it at all. as it starts to bubble up put in the candy thermometer and keep an eye on the temperature. the ideal temp is 248 degrees be sure to check in a few places because there may be hot spots. at this point it should look like this

as it gets to the temp were looking for it will turn more and more into a golden color if you want to add any extracts i would do it about the 240 dagree mark. nuts get added when you put it into the pan.
when it hits the temp you want turn off the heat and quickly put it into a small greased pan ( a little of the butter that you used before works well)

To be honest this being the first time trying to do this. I messed up in a few ways first was the fact that I had no cooking spray when I thought I had some. hence is why if you look in that pic there is some sticking to the sides. Second my knobs have no real markings to it so my heat was a little high. Third the time between 220 and 240 is a lot shorter then what it is for 200-220. so I ended up with a ending temp of around 256 rather then 247 which made the end candy not only a little harder then what I wanted it to be. but it also burned it a little as you can see in the picture above. Lastly the recipe I have doesn’t say exactly how much it makes so I picked a pan that was far larger then what it needed. a meatloaf pan would be ideal.. and would make about a half inch thick pieces when cut. That is why it looks like fake puke. lol however despite all this in the end with the extract and all it kind of gave it a toasted marshmallow taste to it. Not quite what I was going for but it worked out in the end lol

also i have finished my cooking class got an A

for my final project had to make a meal for two without spending more than 10 dollars
i made pasta with chicken
first sauteed the chicken in butter and olive oil(added some salt and pepper for taste)
then when chicken was almost done added some frozen vegetable
sauteed them as well
cooked the pasta(added salt and olive oil to the water)
when the pasta was done i added a little bit of teh water from the pasta to where the chicken and vegetables were cooking. let it boil a bit(added some more salt, black pepper and some crushed red pepper) had some whole stewed tomatoes, squeezed them into the same pot as the chicken and vegetables, then added the already done pasta to the mix for a little while to gather the flavor form everything then served and eaten immediately

very tasty XD

haha sounds tasty but isnt the coursework the main mark scorer in cooking class not the cooking? when i heard that my curriculams cooking plan was 15% cooking 85% coursework it put me off completly. haha speaking of cooking class i accidently made the nicest scrambled egg ever when i forgot to remove the yolk from the eggs whilst i was making holandaise sauce when i realised what i had done and what it was turning into i just finished off the cooking and ate it there and then but my fish and veg dish ended up being pretty dry

god that was 8 years ago XD time sure flies

I'm new here (no shit, Sherlock!).

I don't have any pictures right now, but I have a nice jam recipe. xD
I made Jasmine jam a week ago. Well, it became Jasmine gelatin... =P

What do you need?

Water - 2 cups.
Flower petals - 2 cups.
Sugar - 4cups
Pectin or Gelatin - in case you want to use Gelatin, also add 1/4cup of lemon juice (which I didn't).

Now:

Boil the water and turn off the heat .
Add the flower petals to the water and close the lid. Leave'em there for at least half an hour (or until the water cools).
Remove the flower petals (throw them away) and add the sugar. Mix it and then turn on the heat.
Once it boils, add the pectin/gelatin(and the lemon juice).
Let it boil for two minutes and turn off the heat.

Don't pour it right away into cold glass (it might brake). =P

It's great with waffles. xD
